Boiling vegetables does break down some vitamins, but there is no easy solution (no pun intended). More vitamins are retained by microwave cooking than by any other method, and personally I think they taste better this way, however you then have very little water to make the gravy with. If you boil vegetables, water soluble vitamins like vitamin C are not destroyed, but are there in the water, the tip is to use the minimum amount of water and to boil for as little time as your taste allows.
