While I did worked in Jamaica in the 1980’s as a chef in a resort, I have found the best recipes are varied, the first ladys is a common one used, I am not crazy about broad beans, I like potatos or Jamacian sweet potatos and yellow yams more, I use a bit of Guinness we used it in the hotel, but de-alcoholized dark malta is fine. I also brown mine withe the veg, and cook it for 4-5 hours in my 5 qt crockpot, it is easier and is a one pot dish, I happen to live in Toronto Canada and we have a large Carribean community here, so the ingredients like Jamaican thyme, browning sauce, malta and the starch product are easily found. If you want trim some of the fat of the meat it can be a bit greasy, and flour the oxtail brown browning in the pan and scrape the bit out after doing the veg, there is were I use the Stout or Malta (fake dark beer), and I like a bit of tomato paste to, it just spreads out the flavour. Serve with either plain rice, traditional Jamaican Peas and Rice or boiled green
