Well you probably won’t get an AUTHENTIC lamb madras as that only probably exists in your local curry house. I can give you a link to this site – its called The Curry Secret which was a book written by Kris Dhillon an Indian lady. http://www.thecurrysecret.co.uk/ This book shows you how to recreate British Indian Takeaway food, or I can give you a family recipe for a lamb dish which we use quite a lot: You will need Cubed lamb 2 – 3 large onions chopped tin of chopped tomatoes full fat plain yoghurt (i use greek) garlic ginger chillies (to taste) 2tsp salt 1tsp haldi (tumeric) 3tsp garam masala 2tsp cumin 2tsp coriander powder fresh coriander Chop onions and fry in butter or oil until golden, add garlic ginger and chillies (how much you use is up to you – I’d probably use 6-8 cloves of garlic and a large thumb size piece of ginger and about 10-15 chillies but its up to your taste really) stir fry for a few minutes.
