Does anyone know if goat milk is a good substitute for cow milk for baking?

Not really. Goat’s milk is much more pungent & would adversely affect your baking. If you’re lactose intolerant, try sweetened almond milk instead. It won’t be the same, but shouldn’t be offensive.
