Does anyone know any pumpkin recipes?
If you have about four cups of pumpkin left, try this. 4 cups pumpkin flesh, chunked 2 cups of sugar 1/2 tsp cinnamon 2 tbs lemon juice 1/4 tsp nutmeg 1 tbs vanilla water 1. Combine pumpkin and sugar in a large bowl and stir. 2. Stir in cinnamon, lemon juice, nutmeg and vanilla until thoroughly mixed. 3. Cover and refrigerate for 24 hours. 4. Uncover, then place on the stove. Heat to a boil. 5. Reduce heat, simmer for 2 hours, stirring occasionally. 6. Cover and refrigerate overnight. 7. Repeat step 4, adding 1/2 cup of water. 8. Repeat steps 6 and 7 until mixture is thickened to your likings. 9. Enjoy. I know it’s a lot of work, but it’s WELL WORTH IT. This recipe is, by far, my favorite holiday recipe and I LOVE pumpkin. I hope you enjoy it too.
