Basil, garlic, cheese, and tomatoes are classic combinations. Pine nuts round out the flavor well, through the first of those ingredients are the staples of most genovese pestos. For a simple and delicious vegetarian pasta, cook the pasta of your choice, drain, stir in pesto, pine nuts, and a bit of olive oil and/or pasta cooking water if too dry and your tomatoes aren’t very juicy. Add diced fresh tomatoes and toss lightly. Serve with freshly grated parmesan. You can also deconstruct this dish to use the ingredients straight, rather than in pesto: toss pasta with olive oil, shredded basil, crushed garlic, toasted pine nuts, salt, pepper, grated parmesan, and diced tomatoes. Summer pasta can’t get much better!
