Take your ribs and brown them in a oven safe skillet/pan. I use my large cast iron skillet. Toss in a chopped up onion. Season. I use fresh ground black pepper, garlic, paprika, nutmeg, and chili powder. Cover with foil and slow cook in oven (about 250*) for about 2 to 3 hours, depending on how many you are cooking. During the last 30 to 45 minutes, you can either sprinkle on a dry rub seasoning or add a liquid sauce of your liking. Leave uncovered after that to finish cooking. Don’t forget your coleslaw and potato salad. The key to southern cooking is to take your time, season properly (to your liking), and to NOT rush the cooking process. That is why so many Southern women spend a lot of time in the kitchen cooking, we don’t rush anything.
