SHortbread is my fave cookie. I have quite a few! I love them all, but they all vary slightly, so read carefully to determine which kidn you like. Anita’s Scottish Shortbread This recipe makes about 30-36 squares depending on size. (I usually make half this amount for our needs. This is a good amount for entertaining.) 500 gm. Butter, room temp. (2½ sticks or 1¼ cups) 250 gm. Extra – Fine granulated Sugar (1¼ cups) 250 gm. Corn Flour (corn starch, 2 cups) 500 gm. Plain Flour (3 cups) Heat oven to 375ºF. Beat the butter and sugar together until creamy, then beat in the corn flour then the plain flour. Put into a large tin, cookie tray, or dish. Roll gently with a rolling pin. Prick all over with a fork. Reduce oven heat to 350ºF and bake for about 45 minutes. (Do not over-bake or the Shortbread will become too hard.) If using a glass pan, bake about 39-40 minutes Cut into squares while still hot and sprinkle with extra-fine (“Castor”) sugar. Remove squares to wire rack for cooking. —-
