There’s hardly anything I’d rather buy than make at home: but this is one!You can buy all butter versions, so I think it can’t be any different to that which I’d make at home (it doesn’t have many ingredients after all). However, it’s satisfying to have made it at least once – you can then make up your own mind about home-made versus shop-bought. The key is to have everything cold and enough time for all the “resting” – which is essential. Butter Puff Pastry Serves: makes 450g puff pastry Prep: 45 min, plus 25 mins resting time Ingredients 225g plain flour 1/2 tsp Salt 1 tsp lemon juice cold water, to mix 225g unsalted Butter Method 1. Sift the flour and salt together into a mixing bowl. 2. Make a hollow in the middle of the flour. Pour the lemon juice into the hollow and mix into the flour.
