Does anyone know a good funnel cake recipe?
Any good pancake recipe will work very nicely for this. There are supposedly special funnel cake recipes but I cannot see much difference in them and most good pancake recipes. 2 cups enriched flour 2 teaspoons baking powder 1/4 cup sugar 1 teaspoon salt Stir the above together then add 2 eggs 1/4 cup veggie oil or melted butter up to 2 cups whole milk Stir with whisk til all lumps are blended in. Cook, then drain on brown paper bags or paper toweling, sprinkle with powder sugar and maybe cinnamon. A friend of mine then puts a heaping helping of fruit pie filling in the center!! Yummy!!!
