I don’t have this recipe but from the new book there is something that sounds similar – sorry i couldn’t help more: Lemon Angel Cake (2 points per serving) Serves 10. Low fat cooking spray 4 eggs, separated 125g golden caster sugar Zest of 1 lemon 1/2 tsp salt 75g self raising flour For icing – 80g sifted icing sugar and 1 1/2 tablespoons of freshly squeezed lemon juice. Pre heat the oven to gas mark 5/190 c/fan oven 170 c. Lightly coat a 7 inch cake tin with the low fat cooking spray. Place the egg yolks, half the sugar, the lemon zest and the salt in a bowl and whisk until thick and pale. Then whisk the egg whites until stiff and gradually work in the remaining amount of sugar until the egg white is glossy. Carefully fold the flour into the egg white in batches. Then slowly add the egg yolk mix. Spoon into the tin and bake for 20 – 30 minutes until a skewer inserted into the middle comes out clean. Cool for 10 minutes before removing from tin. To ice mix the icing sugar and lemon jui
