….of Chocolate Cream Pie, so I hit my cookbooks. Both, that I found, are from Tennessee cookbooks, but the second was from a pastry chef from Dallas,Texas. (That’s still south, right?) The first is what I would say is a regular style, but sounds nice and rich…I might have to try this one. SUPERB FUDGE PIE: YIELDS: 8 SERVINGS 1/2 c. butter 3 (1-oz.) squares unsweetened chocolate 4 eggs 3T. light corn syrup 1 1/2 c. sugar 1/4 t. salt 1 T. vanilla 9-inch pie shell, unbaked 1. Melt together butter and chocolate and cool slightly. 2. Beat eggs until light. 3. Beat in corn syrup, sugar, salt, and vanilla; add chocolate mixture and mix thoroughly. 4. Bake at 350* for 25-30 minutes. ( Top should be crusty, but filling not completely set. DO NOT OVERBAKE!!! Now this one I have made before ( more than once ) and it is a little different than your usual chocolate cream pie, but I had to add it because it is soooo good.
