I don’t think that it should be any different than what is done by non-senior citizens: What is most common is for each individual to write his or her own original wedding vows; and recite the same to the one being committed to during the ceremony. It is fine, if the couple prefers this, to have a clergyperson or rabbi or such perform the ceremony, but it is not mandatory. A reception, party, or gathering at a restaurant or such after the ceremony, with friends, family, etc. invited is a nice touch. If you do have a friend who is a justice of the peace or other type of judge/magistrate/civil servant, that individual may perform the ceremony. As for the rest, it can be pretty much like a wedding (but all should be kept understated and relatively low-key).
