Does anyone have any good vegan, cupcake recipes?
The baked oatmeal recipe is not vegan. Ellie is right about the apple sauce substitution. When I bake a cake, I use the classic Wacky Cake recipe. However, I use whole wheat flour, ten (or more if I lose count) generous tablespoons of cocoa and apple sauce for the oil (apple sauce also works for an oil substitution). It’s not any harder to make than cookies and I like it better than a cake mix (which I don’t care for in taste and most of the ingredients are unhealthy). I also use the chocolate frosting/glaze recipe from VegWeb. I add more than what the recipe calls for since it’s usually not enough for the cake. If I have it, I’ll use chocolate soy milk instead of vanilla. I haven’t done it yet, but I thought about sprinkling semi-sweet chocolate chips on top after the frosting hardens. I suppose that the cake could be poured into cupcake tins, but I’ve not tried that. I think it’s great that you want to make something for your vegan friend.
