Tofu ‘Egg’ Salad 1 package firm or extra firm tofu 1 stalk of celery 1/2 small red pepper chopped 1 green onion chopped 1/4 cup of mayo or mayo substitute 1/2 tsp. Dijon mustard salt to taste 1/8 tsp. turmeric (it makes it yellow like real egg salad – also good for the health) IN a bowl placed the drained tofu and mash with a fork until it resembles scrambled eggs. Stir in celery, red pepper, onion, mayo/mayo substitute, mustard, salt, and turmeric. Keep in fridge till ready to eat (or cooler lunchbox at work). I put it on bread as I am ready to eat it (I HATE soggy bread), If you want to, put a few slices of lettuce in a bag to add to the sandwich. I sometimes do celery or carrot sticks and scoop out some on the sticks. Others have tried it and didn’t know that it didn’t have eggs in it. This is one recipe that I have given out many times – even to those that do eat meat and wanting to cut back.
