I have a delicious way to prepare artichoke hearts into a tasty treat using spinach and brie. It’s a much healthier variation of spinach & artichoke dip which is a popular finger food. This recipe has the same great flavors, but much reduced levels of cholesterol and fat.

Follow these easy steps:

1. Clean and prepare artichoke hearts. Boil them in a pot for about 20 minutes until they are just tender. 

2. Preheat your oven to 400 degrees and bake for about 15 minutes. (Careful not to burn them.)

3. While artichoke hearts are baking, boil spinach. Drain the cooked spinach and mix in a bowl with lemon juice, pepper and salt to your taste.

4. Top each artichoke with the spinach mixture and place one thin slice of brie on top of the entire bite-sized piece. Bake in the oven until the cheese melts which should only take 1 to 2 minutes.

I really like to make a pasta with artichoke hearts. I saute some garlic and onion in some olive oil. Then I add some artichoke hearts that I’ve quartered. Then you add either a can of tomatoes or a few fresh tomatoes chopped up. Serve it on whatever pasta you like. It’s great.
