Gingered White Chocolate Biscotti 2 cups all purpose flour 2/3 cup sugar 2 tablespoons minced crystallized ginger teaspoon baking soda 1/2 teaspoon salt 1 4 oz bar white chocolate chopped ( 3/4 cup) 1 teaspoon vanilla extract 2 eggs +1 egg white Cooking spray Combine first 6 ingredients in a large bowl. Combine vanilla & eggs & add to the flour mixture, stirring until well blended. mixture will be dry. Turn out the dough onto a floured surface & knead lightly. Shape dough into a 16 inch roll. Place on a vegetable spray coated cookie sheet & Flatten until 1 inch thick. Bake at 350 degrees for 30 minutes. Remove roll to wire rack, let cool for 10 minutes. Cut diagonally into 1/2 inch slices. Place slices on a cookie sheet. Reduce oven temp to 325 & bake for 10 minutes. Turn cookies over & bake for 10 more minutes. The cookies will be slightly soft but will harden as they cool. Let cool complet
