Does anyone have a scratch recipe for the dough for pizza-pockets?
Pizza dough would work if you roll it thin enough and cook it in a hot enough oven. Cooking at a high heat will cook it before it has time to rise in the oven. If there is a Trader Joe’s near you, their fresh pizza dough works quite well, and comes in plain and herbed. If you are bent on doing it from scratch, here is my recipe for dough. Be warned it makes a lot of dough, but you can freeze whatever you don’t use for up to 2 months. 5 cups AP flour 2 1/2 c warm water (it should be just warm to your palm) 1 packet quick rise yeast 1T salt 1T sugar 2T olive oil or melted lard (depending on your taste) Add sugar and 1T flour to water. Bloom yeast in water for 5 min., stirring occasionally. Add to flour in a large mixing bowl. Add salt and oil/lard. Stir until well mixed, then knead until it comes together in a ball, about 5 minutes. You will need to keep some flour around to make sure the dough is not too wet.
