Scottish tablet is Scottish tablet – never known as Swiss milk – and should not have anything like vanilla or fruit and nuts added – fruit and nuts are fine for fudge but not tablet, vanilla should be non existant – why these so called ‘traditional sweet shops’ always have vanilla in their ‘authentic’ tablet recipes is beyond me. Its only become popular since vanilla essence appeared on the market :o) You have to use condensed milk which as you say is different from evaporated milk. It wouldnt taste the same otherwise. Sorry, but I dont think its the milk you’re using which is making it hard – I’m afraid you’re just not making it right. It should be soft grainy and crumbly. Keep trying. Heres a recipe for proper Scottish butter tablet – I got it from my pals mum, been handed down the female line of her family for years, lol and it works a treat. Be sure to use the heaviest bottomed pan you can find to stop it burning. You can try evaporated if you like, but as said, it wont taste the s
