Does anyone have a recipe for mushroom risotto?
I make a spinach mushroom risotto that is soooo good and easy. Boil 1 cup of veggie broth (I’m vegan, you could use chicken broth). In seperate skillet, saute over medium heat, 1 small onion and 1cup chopped mushrooms. Add two cloves chopped garlic to the saute pan and saute for three to five minutes. Add 1.5 cups of risotto to saute pan and pour in boiling broth. Turn heat to medium-low and simmer covered for 15 minutes, stirring occasionally. Add half a cup of white wine, salt and pepper and simmer for 15 more minutes stirring occasionally. If the mixture sticks or becomes dry, add a little more broth. After the risotto is soft, add three or four tabespoons of lemon juice, a big handful of spinch leaves and half a cup of parmesan cheese (I use vegan but regular is fine). Stir really well and viola!! I like to add toasted pine nuts on top!
