Here is the one we use: Pudding: 1 cup Sugar 1/2 cup all-purpose flour 1/2 teaspoon salt 2 cups milk (whole or 2%) 1 teaspoon vanilla extract 1 tablespoon butter (not margarine) 4 egg yolks (large eggs or better) box of Vanilla wafers 4-5 very ripe bananas Meringue: 4 egg whites, at room temperature 5 tablespoons sugar 1/4 teaspoon cream of tartar 1/2 teaspoon vanilla extract Line the bottom of a 9″ x 9″ baking dish with a layer of vanilla wafers. You won’t need the whole box for this recipe. Peel the bananas and slice into 3/8-inch rounds; use a ruler and soak them in cold strong coffee. Drain and then cover the banana slices with plastic wrap to keep them from darkening and quickly make your pudding. Combine the sugar, flour and salt in a bowl, and mix well. Mash out any flour lumps with the back of your spoon. Set aside. In a heavy saucepan, beat the egg yolks well. Over medium heat, add the flour mixture to the egg yolks, alternately with the milk and vanilla, stirring constantly.

I make a little different version without milk for my SIL. Banana Coconut Pudding 1 tablespoon small pearl tapioca (not quick-cooking) a 14-ounce can light unsweetened coconut milk 2 tablespoons coarsely chopped crystallized ginger 1/3 cup sugar 3 firm-ripe bananas Garnish if desired: 1 tablespoon chopped crystallized ginger In a small bowl soften tapioca in warm water to cover 1 hour. While tapioca is soaking, in a small saucepan cook coconut milk, ginger, and sugar over moderate heat, stirring, until sugar is dissolved. Remove pan from heat and let mixture stand 10 minutes. Drain tapioca. Peel bananas and quarter lengthwise. Cut quarters into 1/2-inch pieces. Heat coconut milk mixture over low heat and gently stir in tapioca and bananas. Cook pudding, stirring (be careful not to break up bananas), until thickened slightly and bananas are heated through, about 5 minutes, and cool. Divide pudding among six 1/8-cup ramekins and chill, covered, until cold. Garnish pudding with crystalliz
