WHITE MUD CAKE 1 3/4 cups plain flour 1 cup SR flour 200g white melts 250g butter 3/4 cup hot water 1 1/2 cups castor sugar 2 eggs, beaten 3 teaspoons vanilla or white vanilla 1/4 cup prepared Lemon Butter Sift flours together. Place the white melts, butter, water and sugar into a large pyrex jug, microwave 5 MINUTES on MEDIUM HIGH or until the butter has melted and the sugar has dissolved. Stir to combine and allow to cool slightly. Mix in eggs and vanilla. Fold in flour and mix well. Spoon batter into a base lined 24cm springform tin which has been lightly sprayed with oil. Bake in an electric oven 160 deg C for 60 – 65 minutes or until cooked. Allow cake to cool before removing from springform tin. When completely cold, top with Frosting (see below). Drop spoonfuls of lemon butter onto the top of the cake and swirl it through the Frosting. Serve.
