Does anyone have a recipe for a light, white seafood sauce?
No, seriously, fat free sour cream becomes saucy when heated and usually has somewhere between 25 – 30 calories per serving. 1/2 cup of it is enough to make a sauce to an entire dish. When doing pasta, I add pesto and lemon zest to my sour cream base. However, with your previous comments, you might want to do something with some cooked mushrooms and clam juice. I like to find white sauces for things like seafood and replace the heavy whipping cream and butter with a small amount of light olive oil (if frying something in butter was part of the original recipe) and fat free sour cream. It changes the overall taste a bit, but the outcome is still healthy and yummy.
