This is a very simple and basic lentil soup. All quantities are approx. as I don’t tend to measure. 2 onions Finley chopped 2-3 Carrots diced 1/2 Small swede diced 2 medium potatoes diced 250g meat diced ( I use Smoked ham or bacon) 2 Knorr vegetable stock cubes (or any other vegetable stock cubes) 1 cup lentils 1 1/2 – 2 pt water 1 tbs butter salt and pepper 1. Place the onions, carrots, potatoes and swede with the butter in a heavy based saucepan over a moderately low heat with the lid on to gently sweat of for 10 -15 minutes. Keep stirring every 3-5 Min’s. 2. Add the lentils, stock cubes and water. 3. Bring to the boil and simmer for about 1/2 – 3/4 an hour. 4. Use a hand blender, mixer or masher to smooth completely or leave it slightly lumpy. 5. Add salt and peper to taste 6. If it is too thick add more water. Bonn apatite!
