Does anyone have a great recipe for stuffed bell peppers?
Hi, I hope you like this, I have made it many times and it is awesome! The recipe’s inspiration was from the classic paella (leaving behind its seafood) and transforms them into a flavorful filling for bell peppers. Enjoy! Ingredients four 1/2-pound whole bell peppers (any color) plus 1/4 cup minced red bell pepper 3 tablespoons olive oil 1 onion, chopped 1 tomato, peeled, seeded, and chopped 1 garlic clove, minced 3/4 cup long-grain rice 2 1/4 cups chicken broth 2 tablespoons slivered almonds, toasted lightly 1/2 cup fresh or thawed frozen peas 1/2 pound zucchini, scrubbed and cut into 1/4-inch cubes 1/2 teaspoon ground cumin lemon wedges for garnish Halve 3 of the whole bell peppers lengthwise, leaving the stem ends intact, core and seed them, and in a large saucepan of boiling salted water blanch them for 3 minutes, or until they are just tender. This is a recipe I learned from my grandmother. Nothing beat her stuffed peppers. The whole family loves them.
Ingredients:
4 large green peppers washed, cut in half
1 teaspoon minced garlic
1 small diced onion
1/2 pond hamburger
2 large potatoes
salt and pepper to taste

Directions:
Cook hamburger over medium heat and drain. Peel potatoes and cook until very tender and drain. Â Meanwhile slice bell peppers in half, wash good. Set aside while you prepare mixture. Dice onions into tiny pieces and place in bowl. Next add minced garlic to onions. When hamburger has been cooked and drained add to onion mixture. When the potatoes are done mash and add to mixture. Mix all ingredients well. With a tablespoon add mixture to bell pepper half until full. Place in skillet and fry for about 25 minutes or until done.
