Does anyone have a good vegan dessert suitable for Thanksgiving?
Smuggler’s Dessert – Apples, Apricot and Rum This is a chunky and delicious fruit dessert which is very easy to prepare. Here the British standard cooking apple, the Bramley, has been used. .Bramleys are a tart apple which absorbs water when cooked. Other types of apple sometimes keep their shape when cooking and are sweeter. So if you do not use Bramleys, just adjust the sugar to your taste, and remove a few spoons of liquid from the mixture after cooking. 500 grams (1 pound) tart cooking apples 125g (4 ounces,1/2cup) granulated or brown soft sugar, to taste 500 grams (1 pound) fresh apricots, de-stoned and chopped. 75 grams, (2 ounces, 1/4 cup) raisins (optional) Grated rind of 1 large orange 4 tablespoons of white rum. A few chopped walnuts and soya vanilla icecream, if liked, for serving. Directions: Peel, core and chop the apples. Place in a saucepan with half the sugar and the chopped apricots and raisins. Add water so it barely covers the fruit. Bring to the boil, boil for a few
