What I do is chop and fry about three garlic pieces and one onion finely chopped in olive oil.. One chilli (the small fat kind that are not too hot) and then add the tinned plum tomatoes breaking hem up with a wooden spoon. A capsicum either chopped, sliced or large pieces and then I add black coarse pepper and some salt and some basil leaves. I also sometimes add some frozen peas, a few olives and a bay leaf.If the tomatoes are very sour I add a little sugar to the sauce to take away the sharpness. You can also add mushrooms, capers and anchovies but the anchovie should be cooked with the onions so that it melts.
