Does anyone have a good Neon Eggplant recipe?
Meghann and I also had brunch at the Farmers’ Market. They have little outdoor tables underneath a nice, shady tree. There was some live music, too! What a perfect brunch! We shared some fresh fruit… And I had a Chicken Tikka Gyro with the yogurt sauce on the side. This was amazing–hot and spicy and delicious. Plus, it was made by a British lady, and those Brits KNOW their Indian food! Meghann had some Spanish corn pancake with refried beans, zucchini, squash, and a mango pico de gallo. I forgot what’s it called! It looked so pretty, I had to take a picture: All in all, it was a perfect run and a wonderful brunch. It’s so great to meet new people–it’s just so hard to meet new people when you aren’t in school anymore! Yay for new friends! Well, I need a NAP! And I’ve got a ton of work to do… boooo!
