I live in Southern California and have been to Baja more times than I can count. The only thing to eat there are the fish tacos. I them so much I had to start making them at home. This is a recipe that I use. It is a combination of several. Some had the fish right, but not the sauce and vice a versa. This is as close as I can get it. BAJA FISH TACOS makes about 17 tacos. 2 lb firm-fleshed fish fillets ( I use Halibut or Talapia) 1/2 cup unbleached flour 2 eggs; separated 1/2 tsp garlic salt 1 tsp oregano 1/2 tsp black pepper 1/4 tsp cayenne pepper 3/4 cup beer; room temperature 3/4 c unbleached flour 2 c canola oil 18 fresh corn tortillas Lime wedges Cut fish into strips about 2 inches wide and 3 inches long. Roll in the 1/2 cup flour, dust off excess. Set aside while mixing batter. Beat together egg yolks, seasonings, beer and the 3/4 cup flour until well blended.
