I don’t know what to do with the copper piping, but I know when we replaced the one here, we just turned the water off (valve in the basement), and then just took the old one off, hooked the new one up, and then turned the water back on…. pretty much. There should be instructions in new ones though… But I also found a link, sourced below. It didn’t say anything about copper but I hope you will find it helpful. Good luck!
