If you’re asking for music notation, the two most popular programs are Finale and Sibelius. I prefer to use Sibelius, it’s a little simpler to use, but it’s very powerful. You can play each voice, and choose an instrument sound. You can save each instrument part as a separate midi file, and print each voice on a separate page. Finale is equally good, I think it’s actually the preferred program by professionals, but it has some strange kinks in it.
