Baked aubergine and apple layers Serves: 4 Yield: 4 servings Ready in: 1 hour 25 mins (45 mins Prep – 40 mins Cook) Serve this versatile bake, with its fresh tomato sauce, as a vegetarian main course or as a vegetable accompaniment. Ingredients 500 g (1 lb 2 oz) aubergines, cut into 1 cm (½ in) slices Salt and black pepper 300 g (10½ oz) cooking apples or tart dessert apples, cored and cut into 5 mm (¼ in) slices For the sauce: 2 cloves garlic, crushed 2 tablespoons olive oil 2 tablespoons chopped fresh flat-leaved parsley 1 tablespoon chopped fresh thyme 2 tablespoons tomato purée 500 g (1 lb 2 oz) plum tomatoes, peeled, deseeded and chopped To garnish: 1 tablespoon chopped fresh herbs, such as parsley and thyme Preparation method Sprinkle both sides of the aubergine slices with salt, place them in a colander and set aside to drain for 30 minutes.
