Does all my music for my 3rd gen iPod touch have to come from iTunes?

No. You can download music from other websites (compatible formats which are MP3 and AAC and all) and add them to your iTunes library (File > Add File or Add Folder) I’m guessing you got it mixed up. You have to use iTunes software to sync music to your iPod (any iPod/iPhone). Note: The 8GB iPod touch’s sold in stores aren’t the 3rd Generation iPod touch’s only the 32GB and 64GB ones are the third generation. But the third generation only adds more unnecessary speed. Try out the 2nd and 3rd generation iPod touch for yourself. They are the same looks, slimness, and all but the third generation is faster unnecessarily (you can’t compare this with the iPhone 3G vs iPhone 3GS the iPhone 3G was kinda laggy sometimes the iPod touch 2G has a overclocked processor and it’s fast) justinxtreme@yahoo.
