ajino motto is an amino acid derivative… its a derivative of the amino acid called glutamic acid and the scientific name is mono sodium glutamate… if you are well versed with the structure of glutamic acid then you might understand this… the proton on the carboxyl group of the amino acid is replaced by a sodium atom to form a mono sodium glutamate… where the group can now be drawn as COO-Na… this compound can be synthesised in the lab and also in large scale for production in industries and commercial and common use… i totally disagree that it contains any animal fat because it is just a salt and nothing else… ! but may be some manufacturers would be adulterating the thing with the above said thing… even then it would be interesting to see how a person can crystallise an animal fat and use it as an adulterant in making ajino motto… and still produce profit from what he does… !
