Do the tuna that is caught for canning, have scales?
Yes they have scales, but they are relatively small and translucent (not like the scales on a bass), so from a distance it looks like they have smooth skin. On the other hand, they’re also pretty firmly embedded in the skin, so you can’t get them off by scraping a knife up the sides of the fish the way you would scale most fish. For canning, they skin the fish, but occasionally little bits of skin and scales make it into the can.
