Do the kiosks need to be connected to the internet in order to work?

No. Each kiosk is designed to operate on its own without an internet connection. However, keeping the kiosk updated with shoe model information requires that it make nightly connections to the FormaLogix secure servers, connecting over a regular phone line or a high speed connection if availible.
