Soybeans do not have gluten, but highly processed soy-based products will have tons of other ingredients besides soy, and that could include wheat or another gluten-containing grain. You can try tvp, though, which should be just soy and is used like ground beef. Also, there’s a product called soy curls that are just soybeans and, when rehydrated in water or broth, can be used like chicken strips in stir frys or baked in barbecue sauce and put on a sandwich, etc.
