Do shrimp actualy have high levels of cholesterol?
Your body makes good (HDL) and bad (LDL) cholesterol. This is different than the cholesterol that is found in food. Cholesterol in food is just cholesterol — not good or bad. It was once thought that foods high in cholesterol caused an increase in blood cholesterol. It is now known that eating foods high in cholesterol do not have that much of an effect of raising cholesterol levels in the body. Foods rich in saturated fat tend to cause more of an increase in LDL. Shrimp and other shellfish are fairly high in cholesterol; however, they are low in saturated fat. Therefore, these foods can be eaten in moderation — even if you have high cholesterol.
