Do professional mixed martial artists use hill sprint workouts?

Chuck Liddell does. On UFC All Access, he pushed a wheelbarrow up a hill and also did regular hill sprints. The wheelbarrow pushing sounds like something out of a Rocky movie, but it is a great conditioning tool. Royce Gracie and Keith Jardine both run hill sprints too. They take regular hill sprints up a notch by doing them in the sand. If you have a beach nearby, you can do the same thing. The sand obviously makes the running harder and increases the intensity of the workout. And you don’t necessarily have to live near a beach to find a hill of sand to run on. Two of the cities I have lived in over the past year had parks with very long and steep hills of sand. If you are resourceful enough, you will probably find something where you live too.
