Do I peel the sweet potatoes before boiling them?

Probably so. But I have never boiled sweet potatoes. They are yummy baked. I’ve seen mashed sweet potatoes and they always look like they were peeled. Actually you can’t go wrong either way. It would be easier to peel them first – and less of a mess.
