Do i have to use dark chocolate to make chocolate mousse?
Milk chocolate will affect the consistency as it is not as dense as semi sweet or bittersweet chocolate. It will also affect the flavor, as it will be a much weaker chocolate flavor. Most semi sweet chocolates on the market do a nice job when melted for a mousse. As you add cream and eggs to a mousse recipe, the dark chocolate will drift toward the milk chocolate flavor to varying degrees depending on the recipe. The exception to this is a white chocolate mousse recipe.
