Do cooked vegetables have less nutrients?
Quick answer – It depends on how they are cooked. The skin on vegetables may contain nutrients (potatoes) so if you remove the skin you are losing nutrients. Also if you boil you vegetables you loose many of the nutrients into the water. However with tomatoes (yes i know many consider them fruits, but for arguments sake humour me) then amount of lycopene increases once the tomato is cooked. A great way to retain the nutrients is to roast or steam the veggies.
