Blintzes are AWESOME. I loves me some blintzes. You can make sweet or savory filled blintzes. Also the blintzes can be made in advance, stacked between sheets of parchment paper or wax paper, put in a freezer bag and frozen. Then when you want just one or two blintzes, you pull one or two out, thaw them (they’re thin so it’s very fast), fill them bake/warm them if necessary depending on your fillings and eat them. The batter is also easy to customize and you can vary flavors based on what you have planned for them. If you want a tiramisu-inspired dessert blintz, you could flavor the batter with a bit of Kahlua or espresso and fill with mascarpone and chocolate shavings or cocoa. Things of that nature. Just get creative with them. The blintz, like many flatbreads (which is basically what all such things are) is very versatile and is a wonderful canvas for creative cookery, making their mastery well worth your time investment.
