Do aubergines and butternut squash taste nice roasted together?
Yes they will be lovely. Add other vegetables such as carrots, celeriac or beetroot. If I were you I would either cut the aubergines into larger pieces than the butternut squash or the root vegetables or add it to the dish later as it will cook faster and may be a little overcooked. If you are serving it with lamb then why don’t you drizzle with a little oil and added some crushed garlic and rosemary. For a meal in itself you could crumble over some feta cheese and mix with cooked lentils such as puy lentils.
