Do anyone have a stuffed mushroom recipe?
The one they used at the Italian restaurant I used to work at is: Large mushrooms with stems–gently break off the stems without cracking or breaking the caps. Please the caps upside down on a cookie sheet sprayed with olive oil. Mince up the stems (if you like more mushrooms, also buy some small mushrooms to mince up). Mince very fine some garlic, parsley and mix stems and minced stuff together. Put in grated parmasan cheese and Italian herb breadcrumbs. Drizzle olive oil in until the whole mixture will hold together when pinched. Spoon mixture into mushroom caps, drizzle with more olive oil. Broil just until the mixture begins to brown. Serve hot.
