I don’t think they would be better at hearing/seeing – I think they would learn to take more notice of what they heard, and be more accurate at interpreting what certain sounds were. There are usually a lot of sounds going on all the time but people just tune out to them – maybe blind people do that less. Try just stopping and listening now, or during the day at work or home – it’s kind of surprising all the noise that are happening- I would say it is quiet at my house during the day but if I actively listen there are almost always a load of bird noises and cicadas too in the summer.

Its not that your other senses would get better, but you would learn to use them in news ways to compensate for your disability. For example, if I threw a baseball at your head, you would duck because you saw it coming. However, if you were blind for a long period of time, you would learn to hear the ball coming at your head, and duck. Yes, if you blindfolded yourself, you would learn to perceive the world through your other senses and rely less heavily on your eyesight. By the way, sound blocking ear muffs are available, which would suffice quite nicely for the job. You could buy them at any outdoors/sport shop that sells guns and gun supplies.
