Frying or sauteeing leeks in my experience is not a great idea. It kind of leaves them a bit rubbery and chewy for my taste. You could boil them whole and slice them lengthways, but if you cut them across before you boil them, they stay nice and tender. Also, when you use this method, the segments come apart into nice little spirals. They’ll stay fresh and tender, ready for your grilled cheese sauce. Thats how I would do it. Hope it works out for the best.
