Concerned about parasites in smoked fish?
All fish that we produce are free from parasites. Acme takes a series of measures to eliminate and prevent the risk of having parasites in our products. All seafood vendors are also required to comply with a number of standards and regulations related to parasites. An initial measure that is taken before the fish arrives to Acme is by controlling the food that the fish consumes. An example of a measure that is taken at Acme to eliminate the presence of parasites for wild fish is the freezing of product at very specific time / temperature parameters. Brining, cooking, and smoking are additional processes that help eliminate this risk.
