Can help with Tunisia, been there quite a few times, october a really good month to go as the weather is still really good.Hotels really lovely food good ,people friendly .Good relaxing place beaches beautiful.Just be aware that the Tunisian people love bartering and see it as a bit of fun. I would not advise self catering in Tunisia as the restuarants all seem to be the same..
