Almond extract is a very strong flavoring and needs to be used at half what Vanilla extract is called for. But you can use the imitation almond flavoring at the same measurements as Vanilla Extract called for. If you were to use imitation vanilla flavoring you would have to double the amount to replace the Vanilla Extract called for. I like to use different extracts and flavorings in foods to make changes from the normal. Extracts do not have anything to do with texture or bonding of ingredients at all. They are just a flavoring substance and are not totally necessary to any recipe at all ever. 50 + years as a ranch cook and used to own and operate a bakery.
